Yes — a forged full-tang German blade holds its edge for years, making it more affordable long-term than replacing cheap stamped knives.
Peeling, coring, trimming, and garnishing — the short flat-cut blade excels at detailed hand work.
I've been cooking seriously for about twenty years and this Wüsthof paring knife outperforms every other one I've tried. The flat cut profile is perfect for peeling apples and coring tomatoes. It took a keen edge right out of the box and the full tang feels perfectly balanced in my hand.
This little knife handles all my detail work — deveining shrimp, trimming Brussels sprouts, hulling strawberries. The handle is comfortable even during long prep sessions. Worth every penny.
Gets used every single day in my kitchen. Sharp, easy to control, and the blade hasn't chipped despite plenty of abuse. I wish the handle were slightly larger for my big hands, hence four stars, but performance is excellent.
Slices a tomato paper thin. No regrets.
First knife disappeared into my daughter's room for her lunch-making and fruit cutting. Ordered another for myself. Great starter knife for young cooks because it's small and easy to control, but it's genuinely high quality German steel, not a toy.
Three inches is three inches, I know, but it looked even smaller in person. That said it performs well for peeling and garnishing and the edge retention has been solid after two months. Just make sure you actually want a compact paring knife before ordering.
At $47.50 this was an easy decision and I'm glad I jumped on it. The forged blade has real heft for such a small knife and it balances beautifully. It's become my go-to for everything from garlic mincing to citrus supreming. Classic Wüsthof quality.
Excellent steel, holds its edge through weeks of daily use, and cleans up easily. The only caveat is that the flat cut blade is really designed for peeling and garnishing — if you need a curved bird's beak for tournee work this isn't it. For my purposes it's ideal.
