Hand wash with warm water and mild soap, dry immediately, and store dry. Never put Les Forgés 1890 knives in the dishwasher — it is not dishwasher safe; harsh detergents and heat can damage the heat-treated beechwood handle and edge.
The hot-forged X50CrMoV15 blade carries a 15° bevel per side at 57–58 HRC. Maintain the edge with a honing steel between uses and sharpen with a whetstone at the factory 15° angle when needed — the steel sharpens easily and holds a sharp edge.
Reviewers praise the Les Forgés 1890 3-inch paring knife for its balance and edge retention on peeling, trimming, and detail work. Compared to standard stamped parers, the forged full tang offers premium control at an affordable discounted price.
Save $44.62 with the Second Chance discount, stack coupon BENCH10, and shop with confidence under the limited lifetime warranty. Final sale — order today.

No — Les Forgés 1890 knives are not dishwasher safe. Hand wash, dry immediately, and hone regularly to protect the beechwood handle and forged edge.

I scrutinized this knife for the 'minor cosmetic imperfections' and honestly I can't locate them. Maybe a faint mark on the bolster? It's razor sharp, the full tang build feels rock solid, and at half price it's an absolute steal. My favorite paring knife now.
There's a tiny scratch on the blade near the spine, exactly as described. Otherwise it performs identically to the full-price version I own. Sharpens beautifully and the beechwood handle is comfortable for detailed work.
Fantastic deal on a fantastic knife. Extremely sharp, well balanced, and the cosmetic issue was barely visible. Buying a second one.
The blade is excellent — edge geometry and steel quality are exactly what you'd expect from the Forgés line. But the cosmetic flaw on mine was more noticeable than 'minor' suggested to me, a visible grind mark on the bolster. Since it's final sale I'll keep and use it, but I'd recommend asking the seller about the specific flaw first.
I prep vegetables for a family of six most nights and this knife has become my default tool. Garlic, shallots, strawberries, trimming green beans — it does it all with a precision the size makes possible. The forged steel is noticeably stiffer than my old stamped parer. The discounted Second Chance price made it an easy decision.
Whatever they inspected, it passed with flying colors. No flaws I can see, scary sharp, gorgeous fit and finish.
Final sale made me nervous but the risk paid off. Small mark on the handle ferrule that only I would ever notice. Cuts like a dream.
I've been cooking for half a century and good small knives matter more than big ones, in my opinion. This parer has a stiff blade and a handle I can grip without strain. Peeling an apple with it is a pleasure again. Quality French steel at a bargain price — couldn't be happier.
Mine came with a noticeable dent in the handle wood and some discoloration on the blade. Functional and sharp, but calling it 'minor cosmetic imperfections' was generous. Final sale so no returns — proceed carefully.
The Second Chance price is so good I ordered a second for our camper. Both arrived sharp and clean with barely visible blemishes. This is genuinely professional-grade steel.
