Upgraded from the Gourmet line and the difference in balance is night and day. The full-tang santoku chops like a much bigger knife and the flat-cut paring is weirdly fun to use. Worth the extra money.
Came scary sharp. The santoku has become my main knife. Zero regrets.
I cook dinner for a family of five most nights and these two knives handle it all. The santoku's hollow edge keeps potato slices from clinging, and the paring knife is precise enough for deveining shrimp and coring apples. The bolster and full tang give a confident, planted feel that my old stamped knives never had. After four months the edge still returns with a few strokes on the steel. For a two-knife kitchen, this is the setup.
No complaints about performance — the German steel is superb and the handles are comfortable even with wet hands. I grabbed these on sale which made them a great deal. At full price I'd think harder, but the quality is undeniable.
