I've been eyeing this knife for a couple of years and finally pulled the trigger when Cutter's Bench discounted it. Carved a prime rib for eight people and every slice came off clean and even. The full tang triple-riveted handle feels bulletproof, like the thing will outlive me. It sharpened back up on my honing steel in about ten seconds after the whole meal. Can't ask for more.

I'm 68 and have owned a lot of knives in my life — some good, mostly mediocre. This Wüsthof is the real thing. The oval divots along the blade really do release each slice so you're not peeling wet meat off the steel. Great knife overall. The 9-inch blade is perfect for roasts and hams but it's more blade than I need for a small chicken. Quality is exactly what you'd hope for from Solingen steel. Keep it in mind if you mostly cook smaller cuts.
Carved a spiral ham and brisket with this and both came out with clean, even slices. The handle grip is comfortable even with greasy hands. Docked a star only because I wish it came with a blade guard at this price. No regrets.
The knife itself deserves 4-5 stars — it's sharp, well balanced, and the hollow edge works as advertised on roast pork. I'm giving 3 because I bought it right before seeing it a few dollars cheaper elsewhere, which stung a bit. Performance-wise I have zero complaints. Check around before you buy, then enjoy a genuinely good carving knife.
Use this every weekend for roast beef and it has never disappointed. Slices are thin, clean, and consistent. Held its edge for about four months of regular use before needing a touch-up on the whetstone, which is pretty normal. The classic handle design also just looks right in a knife roll. Highly recommend.
Disappointed to open the box and find a small chip right at the tip of the blade. The knife itself seems well made otherwise and I'm sure it would carve well. Cutter's Bench did process my exchange quickly, so no complaints about service. Just check your blade carefully when it arrives.
