I had a cheap paring knife for years and thought all paring knives were the same. Wrong. The flat cut profile on this one lets you slice cleanly on the board without the tip digging in, and the forged blade has a heft that makes peeling effortless. The Blackwood handle is beautiful and warm. My wife thought I was crazy spending this much on a paring knife — now she reaches for it first.
Superb steel, holds its edge through weeks of daily prep, and the flat grind is genuinely useful for board work. My only note is that the handle, while gorgeous, is on the slimmer side — folks with very large hands might prefer the Classic. For me it's nearly perfect.
It performs beautifully and the craftsmanship is real. But even discounted, $81 for a paring knife is a lot. It's excellent, just evaluate whether you'll notice the difference in your own cooking. I do for delicate work, less so otherwise.
