Buy the Wüsthof Performer 10" Carver Knife online at Cutter's Bench for $97.12 USD — a $257.88 discount off the $355.00 compare-at price. Built for passionate cooks and ambitious meat lovers, this long tapered carver glides through large roasts, brisket, turkey, and dense vegetables with maximum control and precision.
Rest the meat, grip the non-slip Hexagon-Power-Grip handle, and use long, smooth pulls letting the 10" tapered blade do the work — the DLC finish reduces friction so slices release cleanly without tearing. Cut across the grain for tender slices of roasts and brisket.
To clean the Wüsthof Performer DLC blade: hand wash with warm water and mild soap, dry immediately, and store away from other metal. Avoid dishwashers and abrasive scrubbers — the DLC finish itself is scratchproof, but proper care maximizes edge life. No honing oil needed; the coating resists corrosion.

The 10-inch blade pulls clean slices through a whole packer in one stroke. The DLC coating genuinely reduces drag, I can feel the difference versus my old carver. Hexagon handle never slips even when my hands are slick with rendered fat.
I was skeptical the DLC was marketing fluff. It's not. Thin-sliced ribeye barely sticks to the blade at all. Also, this thing still looks brand new after months of use, no micro-scratches like my other knives. Best carver I've owned in 30 years of cooking.
Slicing performance is superb, glides through roasts and big squash with zero effort. The hexagon grip felt odd for the first few uses, honestly, but now I prefer it. Docking one star just for the adjustment period.
Bought it for Thanksgiving turkey and now use it weekly.
It carves beautifully and the edge retention seems excellent so far. But let's be honest, a hundred dollars for one knife is a lot, and I'm not fully convinced the DLC justifies it over my well-loved Classic slicer. It is better though. Better but not miracle-tier.
Hosted Christmas dinner and this knife was the star. Cut 18 perfect slices of prime rib without a single tear. My brother-in-law, who sells restaurant equipment, immediately asked for the model number. Enough said.
Surprisingly nimble for a 10-inch blade. Cuts like a dream.
Two visible scuff marks in the DLC coating near the spine out of the box. Functionally fine, cuts great, but at this price I expect pristine. Exchanged it, replacement was perfect, but the initial experience stung.
Everyone talks about roasts, but this thing demolishes butternut squash and giant cabbage heads like they're butter. The length gives you real leverage. Only wish it came with a blade guard for drawer storage.
My kids bought me this after I retired and finally have time to cook properly. I carve every Sunday roast with it and it has not needed sharpening in eight months. Comfortable grip for my arthritic hands, which I honestly did not expect from a big knife.
