The narrow, rigid profile glides through raw fish with minimal drag for sashimi-worthy slices. For meat, use long single strokes and let the edge do the work — no sawing.
Sharpen with a honing steel between uses and a whetstone when needed. The polymer handle is dishwasher safe, though hand washing preserves edge sharpness longer.
Dedicated sashimi knives (yanagiba) cost $100+ and demand careful care. The Intempora delivers similar thin-slice results, is dishwasher-safe, and handles everyday slicing — at $47.50, half the typical entry price.
Save $47.50 (50% off $95). Coupon BENCH10 takes an extra 10% off; this item alone qualifies for free shipping over $45.

This knife turned carving our Sunday roast into the easiest part of the meal. The 8-inch blade glides through beef in long, thin slices, and the rigidity gives you real control at the tip. Being dishwasher-safe is a genuine convenience after a big family dinner. Full tang means it feels rock solid with zero flex at the handle.
Razor sharp out of the box. Effortless slices of brisket. Highly recommend.
The rigid full-tang blade takes thin, even slices once you adjust to how stiff it is compared to flexible slicers. It's superb for cooked meats and surprisingly good on large tomatoes. The polymer handle is grippy even with wet hands, and I've run it through the dishwasher several times with no issues.
I know knife people say never dishwasher your blades, but the whole point of the Intempora line is that you can. Twenty washes in and the edge is still slicing smoked salmon paper-thin. Made in France quality at a very fair price.
The knife performs well overall — great balance, solid feel, cuts meat cleanly. Mine had a small burr near the edge that needed a quick stropping session before first use. Customer service was responsive but it's a QC miss at this price point.
Hosting twelve people for the holidays means one knife doing a lot of work, and this one never faltered. Turkey breast, ham, even the melon for dessert — long clean slices every time. Cleanup went straight in the dishwasher which, after cooking all day, was much appreciated. The handle stays comfortable even during a long carving session.
Bought it mainly for slicing roasts and it excels there. The blade is a touch thick for delicate fish work in my opinion. Still, for the sale price of $47.50 it's a genuine bargain. Would buy again.
I've owned German and Japanese slicers costing three times as much, and this Opinel holds its own. The full tang construction inspires confidence, and the edge has needed only a single touch-up after two months of weekly use. The polymer handle won't crack like the wood handles on my older knives. My brisket slices have never been more even. Recommended without hesitation.
Disappointed to find a visible chip near the heel of the blade right out of the gift box. The exchange process through Cutter's Bench was smooth and the replacement seems fine, but the first impression stung. Rating based on the original knife.
