Sandvik stainless holds a fine straight edge for clean peel and detail cuts. The maintenance-free polymer handle is soft to the touch and cleans in the dishwasher – no wood cracking, no hand-wash fuss.
The No. 312's straight edge excels at peeling, hulling, and clean detail cuts. For sausages, tomatoes, and tough skins, choose the serrated No. 313. At $10.00 each, buying both covers every paring task and helps you reach the $45.00 free-shipping threshold.
Vs. the WÜSTHOF Classic Extra Wide Paring Knife ($55.25): the Opinel is dishwasher safe and a fraction of the price, while the WÜSTHOF adds forged heft and garlic-crushing width. For value-first buyers, the No. 312 is the affordable French pick.

The straight edge takes a beautiful fine edge and holds it. I use this constantly for peeling potatoes, trimming green beans, and hulling strawberries. The blue handle is cheerful and hasn't faded after many dishwasher runs. For $10 this punches way above its weight — the Sandvik steel is genuinely good.
Came hair-splitting sharp out of the package. Great little French parer for daily prep work.
Light, sharp, and dishwasher safe. The blade is thinner than my premium knives, which is actually good for delicate peeling work. No rust after months of use.
One for me, one for my mother, one for the camper. Everyone loves them. Simple and effective.
I do a lot of cooking and go through paring knives fast. This one has kept its edge better than most in this price range. The straight edge is much better for peeling than serrated versions. Handle grip is comfortable even with wet hands.
It's a decent paring knife for the money. The steel is good quality and it holds an edge reasonably. Mine just feels a bit lightweight and the handle is a little slippery when greasy. Gets the job done.
I'm 68 and have used a lot of paring knives over the decades. This one reminds me of the good old ones — simple, sharp, and easy to handle. Easy to sharpen myself too.
Got this for my son who's learning to cook. The straight edge is forgiving for beginners and the blade is easy to control. It's survived some careless treatment in the sink already. Good quality for the price point.
Disappointed — the edge on mine was visibly uneven near the heel and needed sharpening right out of the box. It cuts fine now after some work on the whetstone, but I shouldn't have to fix a new knife. May have just been a bad unit.
