Wüsthof Gourmet 2.25" Peeling Knife – precision laser-cut in Solingen, Germany – is the curved, short-blade tool for peeling round fruits and vegetables, cleaning, shaping, and cutting decorative garnishes. Purchase online at Cutter's Bench for $42.50, 50% off the $85.00 compare-at price, and save with coupon code BENCH10 for an extra 10% off.
Hold a button mushroom cap in your non-cutting hand. Press the curved blade tip into the cap's rim at a shallow angle, rotate the mushroom a small turn, and drag the blade around the cap in a continuous shallow groove. Repeat adjacent to each previous groove until the whole cap shows fluting – the upward curve of the Gourmet 2.25" blade follows the mushroom's rounded surface naturally. Work slowly; the short blade gives maximum control for garnish work.
Ideal for potatoes, apples, and any rounded produce, plus fluted mushrooms and decorative cuts. A budget-friendly, lightweight alternative to forged paring knives for fine detail work.
The Gourmet stamped line costs far less than Wüsthof's forged Classic while keeping Solingen steel quality. At $42.50 with 50% off plus BENCH10 coupon savings, it's the affordable deal for adding a specialized peeler to your block. Free shipping on orders over $45.00.

This little knife is exactly what I needed for peeling apples and turning vegetables. The short curved blade gives me so much more control than a regular paring knife. Sharp edge held up through a whole weekend of canning prep with no touch-up needed.
The blade itself is fantastic — thin, wickedly sharp, and perfect for tight curves around a peach. I have larger hands so the handle feels a touch cramped during long sessions, but for quick peeling jobs it's hard to beat. My wife loves it and she has smaller hands, so this is really a matter of preference. Still recommend it without hesitation.
I bought this specifically to practice fluted mushroom garnishes for my culinary classes and it performs beautifully. The blade curves just enough to follow the mushroom cap. My instructor was impressed.
It's sharp and well made, no complaints there. Just be honest with yourself about whether you need a dedicated peeling knife — I use mine a couple times a week. If you do lots of garnish work or peel produce daily, get it. Otherwise a paring knife covers most of it.
You can feel the German craftsmanship the moment you pick it up. Peels a kiwi without mangling it. Enough said.
Nothing wrong with the quality, but I found the 2.25 inch blade awkward for anything beyond tiny potatoes. Returned it and got the 3 inch paring knife instead, which suits me much better. Keeping three stars of goodwill since the steel really is excellent.
Blanches, scores, and peels tomatoes in seconds now. My grandmother had one just like it for decades.
