I've been cooking seriously for about thirty years and have gone through countless paring knives. This Classic IKON is in a different league. The contoured handle fits my hand perfectly, the blade bites into an apple skin without any pressure, and it holds its edge far longer than my old knives did. Full tang means zero flex or wobble. I honestly look for excuses to use it.
Bought this to replace a cheap supermarket paring knife and the difference is night and day. Peels a whole bag of potatoes without hand fatigue. German steel quality you can feel.
Blade is razor sharp out of the box and the handle is genuinely comfortable. Only reason it's not five stars is that I think $115 list is steep, though at the sale price it's a great deal.
I use this mainly for trimming shallots, deveining shrimp, and coring tomatoes. The short blade gives amazing control. Cleaned up a case of artichokes with it last weekend and it still shaves paper.
The steel and edge are exactly what you'd expect from Wüsthof — top notch. But the contoured handle is a bit bulky for my small hands, and I find the classic triple-riveted style more comfortable. Function is great, fit is personal.

No complaints about the steel itself — it's sharp and well made. But after two months the handle developed a slight creak where it meets the bolster and it never felt properly balanced to me. For this price I expected flawless fit and finish. Probably returning it.
