This is my first Wüsthof and the steel quality is everything people say it is — razor sharp out of the box, held its edge through a big holiday roast plus weeks of regular use. My only note is the handle is a bit more sculpted than I expected, so it took a couple of uses before the grip felt natural to me. Once I adjusted, it's genuinely a joy to use. The rivet detail makes it look handsome on the counter too.
Blade is outstanding and the hollow edge genuinely prevents sticking on moist roasts. My hands are on the smaller side and the bolster-to-handle transition feels slightly bulky during long carving sessions. Still a five-star blade in a four-star fit for me.
